It’s pretty bedded into our DNA at this point here at Polly’s.

Whilst we happily embrace our status as a modern day juice slinger, we’re also deeply conscious of paying homage to the breweries that sparked the inspiration for us to brew beer in this sleepy corner of North Wales in the first place. Why not then we figured, take three hop varieties from across the timeline of modern brewing, all of which hold high hop oil concentrations which lend to those wonderfully crisp and bitter beers we ourselves grew up drinking, but also showcase incredibly well on the cold side to boot?

Falling Levels brings a trio of hops we love here at the brewery – Azacca, Citra and Centennial, and they’re singing in harmony with one another in this beer. An underlying clean bitterness forms the backbone of this beer, before a trifecta of uniquely distinctive flavour profiles brings this beer straight into the present day – fresh cut citrus fruits, tropical notes, and just a hint of grassiness for balance.
